Peanut butter oat bran cookies

Alright — so just recently I had a fun girl's night and I typically like to volunteer to bring the dessert when we're doing dinner potluck style. Although I definitely love my every-now-and-then indulgences, I try to stick to "healthier" versions of fav recipes for better health. A few weekends ago I volunteered to make these peanut butter oat bran cookies and they were SO delicious, girls! Very crispy — great with a cup of coffee, a latte, or tea and full of fiber (although you can't taste it) because of the oat bran. Hope you enjoy!
Ingredients:
1/2 cup butter, melted (Note: I used light margarine)
1/2 cup white sugar
1/2 cup brown sugar
1 egg or 2 egg whites
1/2 cup peanut butter (Note: I used all-natural)
1/2 tsp. pure vanilla extract
1 cup unbleached all-purpose white flour
1 1/2 cups oat bran cereal (Note: I used Hodgson Mill's — it's usually in the organic aisle at the grocer)
3/4 tsp. baking powder
1/4 tsp. baking soda
Directions:
1. Preheat oven to 350 degrees.
2. Mix melted butter with sugars.
3. Add egg (or egg whites) and mix well.
4. Stir in peanut butter and vanilla and beat until smooth.
5. Add remaining dry ingredients and mix well.
6. Drop by teaspoons (Note: I made my cookies a bit bigger) onto ungreased cookie sheets. Criss-cross on each with the tines of a fork.
7. Bake 10-12 minutes (Note: My cookies took about 14 minutes)
or until golden brown.
8. Transfer to cookie racks to cool completely. And voila! You're done! Smiling Enjoy! |
